Harvest is one of the most decisive stages in the coffee production process. Picking the cherries at their optimal level of ripeness is essential for the beans to develop their full potential and it largely determines roast stability, cup consistency and the longevity of green coffee over time.

The length of the harvest and the time of year when it takes place vary depending on the country, altitude, climate and agricultural practices. For this reason, having clear information about harvest periods by origin is a highly valuable tool for roasters, not only to anticipate new arrivals, but also to understand where each coffee they work with stands within its production cycle.

From consuming countries, we usually pay close attention to news coming from origin to follow how harvest campaigns are developing. However, the true value of this information lies not only in identifying fresh-crop coffees, but in understanding the complete life cycle of green coffee, from harvest to roasting.

This means that even if two countries harvest during the same months, their coffees may not arrive at destination at the same time. For this reason, the calendar should be understood as a highly informative reference tool, not as a rigid document.
